I find every kind of squash to be an amazing treat. Acorn squash baked with “butter” and a little brown sugar for breakfast is delightful. Zucchini in any format makes me smile. Butternut squash is also a versatile delicacy, but my overall favorite is spaghetti squash. Quite filling, easily dressed up with different spices and sauces, great texture. I love scooping it out of the shell and watching the little strands expand into fluffy, golden “noodles”.
