We refer to it as “scrounge dinner”, I will put together whatever I can find in the kitchen that seems to make sense. In this case, it was a ready-to-make quinoa packet from Seeds of Change. I microwaved the packet while sautéing garlic, carrots, onions, finely chopped dinosaur kale, zucchini and summer squash. Then I combined everything in vegan butter in the pan and it was done. The grain packet was already seasoned, so adding the onion and garlic simply brought the flavor up to an acceptable level for us. High amounts of protein and fiber!
