Tofu Salad Sandwich!
When I ate this at work everyone annoyed me with questions of “I thought you didn’t eat eggs….”
Try this salad on toasted rye or in a pita. Must have tomato slices and sriracha!
16 ounces firm or extra firm tofu, drained and crumbled
1/2 cup Vegenaise
1 tbs Dijon mustard
2 long celery stalks, diced
a few pinches of turmeric
1/2 tsp black pepper
2 chopped shallots
1 tbs dill relish or chopped dill pickle
Easy Directions, if you haven’t figured it out already:
1. Prep veggies, dry and crumble your tofu – toss in large bowl.
2. Add other ingredients
3. Toss well.
4. Let it sit a little, (maybe 10 minutes?) Then feast!
